Picnic recipes from our Farm Step Tenants

What better way to enjoy fresh, local produce than in the very green spaces where it was grown? If you’re heading to Earth Trust for a picnic this summer, then why not try some of these amazing recipes and support our Farm Step Tenants while you’re there.


Norton and Yarrow’s Goat’s Cheese Tarts

Norton and Yarrow’s goat’s cheese

Ready roll puff pastry
Extra toppings such as caramelised onions, courgettes or tomatoes
Goats cheese
Olive oil
Herbs and seasoning

1. Lay out a sheet of ready roll puff pastry, add your choice of veg and then the goats cheese on top.
2. Drizzle with olive oil, season well with salt, pepper and herbs.
3. Cook for about 15-20 mins on a high temperature until the cheese starts to brown.

Rachel says, “I think a cooked dish is probably the best way to take any kind of cheese to a picnic as you avoid the risk of cheese melting or getting sweaty (which no one wants!). But if you are taking sandwiches then I like to pair our goats cheese with pesto and finely chopped sun dried tomatoes in a crusty baguette or roll. Or, if you are looking for something more indulgent it also goes well with local honey and a sprinkling of chilli flakes to add some edge.”

Brightwell Bee’s Honey Flapjacks

Honey bees at Earth Trust

100g margarine
50g light brown sugar
3 tbsp honey, set or runny
200g porridge oats


1. Melt the margarine, honey and sugar in a saucepan.
2. Mix in the oats.
3. Press into a greased tin and bake at 180C for 15-20 minutes until just turning golden on top.
4. Cool in the tin and then cut into slices to enjoy.

Though if you don’t fancy baking, then as Viv says, sometimes a plain honey sandwich is just as good!
